
I decided not to make any specific resolutions this year because I feel like sometimes (especially after last year’s uncertainty) that it can set you up for failure if you don’t live up to your original goal. What I did do though is to decide to make a better effort to eat healthier this year and try to get more exercise! Part of my plan to eat healthier is to try to cook at home more. Cooking healthy meals is easier when your Ingredients are delivered right to your door

I was able to order all I needed for a yummy and healthy meal for the whole family at 10am (and still in my jammies) and had all my ingredients delivered to my door by 12pm! Below are the recipes to make two of my family’s favorite healthy dishes: Egg Roll in a Bowl and Cauliflower Fried Rice.
Egg Roll in a Bowl
Egg Roll in a Bowl is one of my favorite Keto recipes that tastes so good and only has 4 net grams of carbs per serving! All ingredients are available to order using Walmart +!
Ingredients:
- 1 tbsp Avocado oil
- 4 cloves Garlic (minced)
- 3/4 tsp ground ginger
- 1 lb Ground beef
- 1 tsp salt
- 1/4 tsp Black pepper (or more if you want it spicy)
- 4 cups Shredded coleslaw mix
- 1/4 cup Coconut aminos
- 2 tsp Toasted sesame oil
- 1/4 cup Green onions
Directions:
- Heat avocado oil in a large pan over medium-high heat. Add garlic and ginger.
Sauté for about a minute.
- Add ground beef. Season with salt and black pepper. Cook until browned.
- Reduce heat to medium. Add the coleslaw mix and coconut aminos. Stir to coat.
- Cover and cook for about 5 minutes, until the cabbage is tender.
- Remove from heat. Stir in the toasted sesame oil and green onions.
- Serve and enjoy!
Cauliflower Fried Rice
Cauliflower fried rice is a healthy, low-carb dish. My family loves it and it’s filling enough to have as a main course!
Ingredients:
- Vegetable oil
- 2 large eggs, beaten
- pinch of Salt (to taste)
- 1 cup chopped green onions, light and green parts separated (you’ll need 5-6)
- 3 garlic cloves, minced
- 1/4 teaspoon ginger powder
- 3 bags cauliflower rice
- 4-5 tablespoons soy sauce
- 1 teaspoon sugar
- 1 cup frozen peas and carrots
- 1 teaspoon rice vinegar
- 1 teaspoon Asian/toasted sesame oil
Directions:
- Add a few teaspoons of oil in a large nonstick skillet or wok over medium heat. Add the eggs and a pinch of salt and cook over medium heat until scrambled.
- Set the eggs aside, then sauté the green onions, ginger, and garlic in oil until softened.
- Add the cauliflower, soy sauce, sugar, and salt. Cook, stirring often, for about 3 minutes.
- Add the peas and carrots and continue cooking until the cauliflower is tender-crisp and the vegetables are warmed through, a few minutes.
- Stir in the rice vinegar, sesame oil, green onions, and scrambled eggs.
- Serve and enjoy!
